Vinification | The stalks are manually separated and crushed slowly, then they are pressed with dry ice. Fermented in new French oak barrels with a capacity of 225 and 500 liters. Fermentation lasts about 30 days. |
Winemaking | The grapes are de-stemmed and after a soft pressing is entered in the press with dry ice. The must is clarified with settling natural wood and sent for fermentation, preferring barrels of 500 liters. The fermentation has a duration of about 30 days. |
Refining | In barrels for about 8 months with lees stirring repeated weekly. |

Chardonnay - French variety, first mentioned in the writings of Catholic priests Tainturiera.
Wines from varieties 'Chardonnay', surely one of the most popular and most common worldwide.
Because of their physiological characteristics, this grape variety, successfully grown in almost all wine regions. Similarly, the success of Chardonnay varieties should be attached to the oenological flexibility that lets create all sorts of white wines, from sparkling to sweet (dessert wine).
